Well, today I am making a inihaw (grilled) pinoy style pork chops. Marinated in soy sauce and kalamansi (key lime) juice with pepper and some seasoning. I was lucky there were a few bunches of key lime left at the store. Not very often they have it. Apparently, I was looking for some more recipe that might be closest to that simple recipe but none that I could find on the net, there was one that was kind of fancy so I spared it, instead I stuck on my simple one. Last summer, we set up a bird feeder like glass hummingbird feeder to cater to the birds that are hungry and nothing to get from the woods. Now worms or anything to pick up to feed themselves. And from the window of our room we'd watch the birds set themselves securely on top of the feeder and greedily eat, like they never ate in so long. Poor birds.
I even thought that maybe this year we are going to change our old bird feeders with that humming bird feeder because it simply attracts more birds and we can feed more hungry birds! As long as the weather continuously get better towards summer, we'll be able to set it up.
Ahh, summer yesterday, today it's back to cool wind chilling me again. But, I understand it is trying.
I haven't got done with some of my shopping, I made some stupid mistakes of ordering stuff online that I didn't even know how reliable to sites were and now I am bummed I spent almost $400 on two occassions within 3 days and bam! I didn't know where it went. Lesson learned: Before buying online make sure you have shopped to the actual store before spending big bucks especially. Now it's still bugging me how stupid I am! So, tomorrow I am going with my friend again to go some shopping. This time I will spend more wisely ;-)

Because I am the new care taker of our little kitchen, I am always trying to find a new way to make something. In fact, foods and cooking start to be my consolation when I don't want to wake up in the morning and I just imagine the smell of the foods I am going to cook for the day.
Well, last night I was just realizing that making foods cost so much money. And with the budget cut back I originally planned, I need to find a way to get Bulk Foods when cooking. I also realized thatI also realized that not only that we simply cook but we have to make sure the nutrition of the foods we’re making could benefit our family’s health. It was perfect because I was thinking of making some oatmeal raisin cookies and all I needed was on this website! Anyways, I was sooooo happy today I talked to my sissies in the Philippines. Finally they got their internet working and I could talk to them more often now. We just got back from playing putt-putt golf up the hill where we live. It was a fun 15 minutes while the sun slowly sets itself. Ingredients
- 3 pound(s) bone-in chicken pieces (thighs and/or drumsticks and/or breasts), skin removed, trimmed (see Tip)
- 3/4 teaspoon(s) coarse salt, divided
- 1/2 teaspoon(s) freshly ground
pepper - 2 tablespoon(s) canola oil
- 1 tablespoon(s) butter
- 4 cup(s) finely diced onions
- pinch(s) sugar

- 1 cup(s) diced red bell pepper
- 1/2 cup(s) diced green bell pepper
- 2 tablespoon(s) tomato paste
- 2 tablespoon(s) sweet
paprika - 1 teaspoon(s) crushed red pepper
- 1 teaspoon(s) dried marjoram
- 1 cup(s) reduced-sodium chicken broth
- 1/2 cup(s) reduced-fat sour cream
- 1 tablespoon(s) all-purpose flour
- 2 tablespoon(s) finely minced fresh
parsley, dill and/or chives
Directions
- Pat chicken pieces dry with paper towels and season with 1/2 teaspoon salt and pepper.
- Heat oil and butter in a large heavy casserole or Dutch oven over medium heat. Add onions and sprinkle with sugar. Cook, stirring frequently, until the onions are very soft and light brown, 10 to 15 minutes.
- Stir in bell peppers, tomato paste, paprika and crushed red pepper. Add the chicken and stir it gently into the onion mixture. Sprinkle with marjoram and add broth. Cover the pot with a tight-fitting lid and simmer over medium-low heat until the chicken is very tender, about 50 minutes.
- Just before the chicken is done, whisk sour cream, flour and the remaining 1/4 teaspoon salt in a small bowl until smooth.
- When the chicken is done, remove it to a plate. Stir the sour cream mixture into the sauce; return to a simmer and cook, stirring, until the sauce coats the spoon. Reduce heat to low, return the chicken to the sauce and reheat, about 1 minute. Serve garnished with parsley, dill and/or chives, if desired.
Tips & Techniques
Tip: If you are using a combination of thighs, drumsticks and breasts, cut each breast in half crosswise to make pieces about the size of a thigh. And if you buy whole legs, separate the drumsticks and thighs. When the pieces are about the same size, they'll cook at about the same rate. I hate that I have been procrastinating but I guess taking things one step at a time would prepare me better. Well, June is passing almost like a whirlwind. Pretty soon my vacation is over and will be back to reality. Going back to school and going back to business. I am not quite sure if I would want the vacation to be over or I am more excited to go back to school. The latter is great I guess, because I could get the school over with as soon as I can.

At first, I was hesitant to even file my application because of some wrong conceptions until one day I had to courage to talk to somebody at the financial office and the person gladly walked me through the process. I finished up the application and after a few days, I got an email saying I was able to get grants for certain amount for the whole 3 periods (summer, fall and spring), not a whole lot of money but a little extra cash is always good especially if we don’t have to pay them back, right?
Instead, i guess I am going to think about what to cook tonight. I know we just had sesame eggplant the other day but we didn't enjoy the thing as much as we thought. - 8 tablespoon(s) olive oil
- 1 large eggplant (about 1 3/4 pounds), peeled and cut into 1/2-inch cubes
- 1 1/4 teaspoon(s) salt
- 2 cloves garlic, minced
- 3/4 pound(s) penne

- 1/2 cup(s) chopped fresh parsley
- 1/4 teaspoon(s) fresh-ground black pepper
- 2 tablespoon(s) lemon
juice
Directions
- In a large nonstick frying pan, heat 2 tablespoons of the oil over moderate heat. Add one third of the eggplant and 1/4 teaspoon of the salt and cook, stirring occasionally, until the eggplant is tender and brown, about 4 minutes. Remove the eggplant from the pan and put it in a large bowl. Cook the remaining eggplant in two batches, each using 2 tablespoons of the oil and 1/4 teaspoon of the salt. Add the garlic to the last batch of eggplant during the final minute of cooking.
- Meanwhile, in a large pot of boiling, salted water
, cook the penne until just done, about 13 minutes. Drain. Rinse with cold water and drain thoroughly. Transfer to the bowl with the eggplant. - Toss the pasta
and eggplant with the remaining 2 tablespoons oil and 1/2 teaspoon salt, the parsley, pepper, and lemon juice. - Notes: Eggplant soaks up oil like a sponge; so it's best to cook this vegetable in a nonstick pan. That way, you can limit the amount of oil available for the eggplant to absorb without worrying about it sticking.

I knew that he appreciated the watch I gave him and didn't matter if I spend hundreds of dollars or less than a hundred bucks, he used the watch everyday and even sleeping sometimes. Soo cute. I prefer a leather strap than metal because the metal usually pinches your skin when you put the watch on.
Watches are definitely great ideas as gifts for our dads or any dad, they last and they are useful. I also like the chronograph watches, so when we travel we would know the right time at where we are, back home and where my family is in case I would have to make a quick phone call to keep in touch. I think, I would actually get the chronograph one!
I am thinking of making some fish, maybe mahi-mahi (dorado) but it seems that the past few days we have been making meals that have gingers and this recipe that I found (and sounds delicious) is also gingered!

The past few months, my marriage has blossomed into a more mature pace, more loving relationship. Each morning, I realize how lucky I am to have somebody who understands me and watch me grow in every way. Somebody who would support my ambitions and goals towards their reality. That despite I am labeled 'stubborn' by many people including my husband before, he knows that I would learn from my own mistake. I could not ask for more, my husband lets me make mistakes and give me proper guidance as best he could. He doesn't set limitations on where I could go as far as career goals, nevertheless supports me fully on my pursuits. I am so thankful for everything that I have. Thank you so much my dear. I owe so much from you.
I actually found an article that makes me even more proud that I had the guts to encourage a big change here. For some people who are afraid that when their hair gets shorter, a leap that might post limited styles when dressing up, I personally think the same thing it doesn't mean we can't be beautiful. The change alone is nice and can give a drastic and positive outlook on our own personality. I should be able to take some pictures of my new hair and share it with you.
